Product Description: Lunching with Laurie has become an experience. Ever since that date shortly before her third birthday, when we were advised by the specialists at Duke University Medical Center that Laurie apparently had Celiac Disease, my metal as a cook, dietitian and psychologist has been tested. We were told that very little was known about the treatment of this illness and all that could be suggested was a gluten-free diet. It appeared that an allergy to the gluten in her food was presenting Lori from assimilating nutrients. The problem was simple! Avoid foods containing gluten! Gluten, we found, is the sticky substance which is adhesive Ms. to go - - and is found principally in wheat, rye and barley. The problem suddenly became complex. Virtually every meal a healthy American child eats is laced with wheat, rye, barley or one of their derivatives. The virtues of wheat and malt bombard us hourly from the television. Children are urged to eat this or that delicious cereal to become veritable supermen. Wheat is the "Staff of Life". Malted milk is the "Drink of Health". I was overwhelmed.... I hope that those of you who have a child with digestive allergy will find, as I have, that the problem is not as staggering as it may first appear. The invitation to try new recipes becomes a command, but it can prove a delightful experience if you approach it in a cheerful and enthusiastic frame of mind.
