You don’t have to be an experienced chef or spend ages in the kitchen to produce delicious desserts that will surprise and delight your guests. More than half of the recipes in this book can be prepared in under 30 minutes. They have been selected because they are yummy and provide variety to suit different occasions and moods.

My recipes for sticky toffee pudding, tiramisu and banoffee pie alone are worth the price of this book. I say this because of the praises they have repeatedly received over the past 18 years. My intentions are to pass on my tips and techniques so that you, your family and friends may enjoy home-cooked, wonderful desserts.

In writing this book, one of my main aims is to provide clear, step-by-step instructions. I used to be a school teacher, and have listed ingredients and methods as I would for one of my science classes. Surprisingly a lot of recipe books, even (or especially) those by famous chefs don’t do this. Once mastered, these recipes will serve you well for a lifetime.

At the beginning of the book there are lists of equipment and ingredients that you should endeavour to collect over a period of time. Each recipe has a list of equipment and ingredients at the beginning, so you can tell at a glance what you need before you start cooking.

All recipes have been timed from the moment the ingredients are gathered to the times the dishes are ready. These timings will vary depending on your level of skill, type of dishes used and your stove. My stove is a modern electric cooker with a fan oven.

Weight measurements are given in grams as well ounces whilst volumes are in mls and cups. Temperatures are provided in C, F, and gas mark.
